19 Feb Tasty Chicken Tacos
I don’t know about you, but I love a tasty quick meal. Not only do I like chicken tacos, but my children LOVE them. I usually make a big enough batch and keep a leftover bowl of shredded chicken in the refrigerator. It’s easy to grab and put in a salad, over nachos, or a quesadilla. My favorite way to make shredded chicken is using my pressure cooker, but you can also slow cook it in a crockpot, or on the stove. This recipe is really easy either way. So, I hope you are ready to try the best chicken tacos of your life.
What you will need:
- 2-4 pack of skinless chicken breast
- 1 pack of taco seasoning
- 1 jar of salsa
- Taco shells or soft tortilla (I like to use corn tortillas and fry them)
Rinse your chicken and pat it dry using a paper towel. After you have dried chicken off season it to your liking. I season my chicken breast with a pinch of seasoning salt, pepper, onion powder, and garlic powder.
(PRESSURE COOKER ONLY) pour a little salsa in pressure cooker, place chicken in pressure cooker, and then pour the remainder of the salsa over the chicken. Turn on your pressure cooker (I have an Emeril Air fryer/pressure cooker) I usually set it at medium and let it do its thing.
(STOVETOP ONLY) Sear chicken breast in about 1/4 cup of salsa. After turn the stove on low, pour salsa over the chicken, and place the lid on pan. Let it cook until chicken is completely done and tender.
Once chicken is completely done take a fork and pull chicken apart. Once chicken is pulled apart pour packet of taco seasoning over chicken and mix it. Place lid and let it simmer for about 10 more minutes (If you are using a pressure cooker and have a sauté mode turn it on or let it simmer). If you want more salsa feel free to add it.
Now time for the best part, serve on a taco shell/ soft tortilla with your favorite toppings.
I like to fry my corn tortilla in a little oil, top with fresh salsa, shredded lettuce, Mexican cheese, and a lime crema.
